Smoky Tofu Breakfast Scramble
This quick tofu scramble comes together in just minutes and will leave you feeling satisfied and nourished. Perfect for a quick morning breakfast, meal prep or a savory meal for any time of the day.
Ingredients
- 1 Tbsp1 Tbsp1 Tbsp Extra Virgin Olive Oil
- .5 cup.5 cup.5 cup Yellow Onion
- 1 whole1 whole1 whole Tofu, block, extra firm
- 1 Tbsp1 Tbsp1 Tbsp Coconut Aminos
- 1 tsp1 tsp1 tsp Liquid Smoke, Hickory
- 2 cloves2 cloves2 cloves Garlic, minced
- 1 tsp1 tsp1 tsp Smoked Paprika
- 1 tsp1 tsp1 tsp Cumin, Ground
- .5 tsp.5 tsp.5 tsp Turmeric
- .25 tsp.25 tsp.25 tsp Sea Salt
- 4 cups4 cups4 cups Baby Spinach
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Drain and press the tofu to remove excess water
- Heat the oil in a skillet over medium heat
- Add the onion and garlic and saute until soft
- Crumble the block of tofu into the skillet.
- Add in the remaining ingredients except the spinach.
- Cook for 5-7 minutes until seasoning is well combined.
- Add in the spinach and cook until the spinach is wilted.
- Serve as it, paired with breakfast potatoes, avocado, or on toast
