A show-stopper but secretly so easy. This roasted purple cauliflower is coated in za'atar spices, roasted until golden and tender, then served with a creamy tahini drizzle and garlicky hummus. Perfect for a gut-friendly, plant-based dinner or an impressive side dish!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat oven to 400°F (200°C).
  2. Remove leaves and trim the base of the cauliflower so it can sit flat.
  3. Rub the cauliflower all over with olive oil.
  4. Sprinkle generously with za'atar, garlic powder, salt, and pepper.
  5. Roast uncovered on a baking sheet for 40–50 minutes, or until fork tender and lightly browned. (Cover loosely with foil if it browns too quickly.)
  6. Whisk tahini, lemon juice, garlic, salt, and warm water together until smooth and pourable.
  7. Blend chickpeas, garlic, tahini, lemon, cumin, olive oil, and salt until smooth and creamy. Add a splash of water as needed to reach desired texture.
  8. Place the roasted cauliflower on a serving plate. Drizzle generously with tahini sauce. Serve with garlic hummus on the side or spread underneath for a gorgeous plating moment!
