Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a microwave-safe mug, whisk together the all-purpose flour, baking powder, ground cinnamon, and granulated sugar until well combined.
- Stir in the milk, melted butter, and vanilla extract, mixing until you have a smooth batter with no lumps.
- Sprinkle the cinnamon sugar evenly over the top of the batter.
- Place the mug in the microwave and cook on high for about 1 minute 15 seconds to 2 minutes. The cooking time may vary depending on your microwave's power. Keep a close eye on it to avoid overcooking, as the cake may become dry. Check the mug cake after 60 seconds. Microwave in 10 second increments as needed.
- The snickerdoodle mug cake is ready when it has risen and looks firm on top, and the cinnamon sugar forms a slightly crunchy topping.
- Carefully remove the mug from the microwave (it will be hot!) and let the cake cool for a minute or two before enjoying.
- You can eat the snickerdoodle mug cake directly from the mug or transfer it to a plate if you prefer.
- Lastly, feel free to add a dollop of whipped cream or a scoop of vanilla ice cream on top for an extra indulgence.
Notes
If you are gluten-free, use gluten-free flour. I love King Arthur Flour and Bob's Red Mill. Use at least an 8 ounce mug. All microwaves are different. Mine is 1200 watts and took 60 seconds. After 60 seconds, check on the mug cake. If more time is needed, microwave in 10 second increments.
