Gluten-Free Cinnamon Sugar Snap Cookies
These delicious gluten-free Cinnamon Sugar Snap Cookies have the flavor of a snickerdoodle, and the crunch of a gingersnap. They are the perfect cookie to make for the base of a cheesecake!
Ingredients
- 180 grams180 grams180 grams Gluten-Free All-Purpose Flour - Primal Palate
- 1/4 tsp1/4 tsp1/4 tsp Himalayan Pink Salt, fine salt
- 1/2 tsp1/2 tsp1/2 tsp Baking Soda
- 1/2 tsp1/2 tsp1/2 tsp Cinnamon Sugar Cookie Blend - Primal Palate
- 1/4 cup1/4 cup1/4 cup Brown Butter Organic Grass Fed Ghee - Spring Sunrise, softened to room temperature
- 1/4 cup1/4 cup1/4 cup Butter, Unsalted, softened to room temperature
- 150 grams150 grams150 grams Granulated White Sugar, 3/4 cup
- 1 whole1 whole1 whole Egg, one large egg at room temp
- 1 tsp1 tsp1 tsp Vanilla Extract - Primal Palate

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat your oven to bake at 375 degrees F. Line a baking sheet with parchment paper.
- In a small mixing bowl, whisk together the flour, salt, baking soda, and Cinnamon Sugar Blend.
- In a large mixing bowl, combine the butter and brown butter ghee.
- Pour the granulated sugar over the butter and ghee, and beat with a hand mixer on low speed to cream the butter and sugar.
- Add in the egg and vanilla, and beat again on medium speed to combine the egg and vanilla with the butter and sugar.
- Pour in the dry mixture, and beat again on medium speed, scraping down the bowl as needed, until you have a smooth cookie dough.
- Using a cookie scoop, dish out balls of dough, and roll them in granulated sugar if desired.
- Place them 2 inches apart (these cookies spread), on a parchment lined baking sheet.
- Place the cookies in the oven, on the middle rack, to bake for 14 minutes at 375.
- Allow to cool for 5 minutes on the baking sheet, then transfer to a wire rack to cool completely.
