Sourdough Sandwich Bread – Bread Machine (NO YEAST) (Edit recipe)

No instant yeast added to this, only the natural yeast from a sourdough starter. You need a good, bubbly, active starter to make this work. The bread machine I personally use is the KBS Pro Bread Machine. I can only give you the settings for my particular machine, but you could potentially match them with yours. Mine has a "natural sourdough" option and it walks through 3 ferments over the course of about 6 hours prior to baking and that is why this works so well. That is why you can dump and go and not look back! OTHER BREAD MACHINES, SEE NOTES AT BOTTOM

Ingredients

  • 325 grams Milk, I use raw milk straight from the fridge
  • 71 grams Butter, Salted, I use cultured butter, room temp
  • 450 grams All Purpose Flour, I use the organic, unbleached flour from Costco
  • 42 grams Honey, ~2T
  • 10 grams Sea Salt, ~2t
  • 140 grams Sourdough Starter, Homemade, Bubbly, active

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Dump ingredients into your machine, in order.
  2. Select a 2lb (1000g) loaf, "natural sourdough" (option 3 on my personal machine) and "medium" crust.
  3. Press "Start" and walk away. If you'd like to remove your paddle, do so during the 3rd ferment. The bread will bake fine with the paddle in if you forget or don't want to remove it. You can also cut a relief down the center of the bread towards the end of the 3rd ferment if you want to control where it busts, but again, not necessary.
  4. Promptly move to cooling rack when machine is finished with bake cycle. Allow to cool completely, cut and store. Store on counter for 1-2 days and then in the fridge.

Notes

If you have an issue with your loaf rising and you measured in grams, I would unfortunately have to point you back to your starter likely being the culprit. OTHER BREAD MACHINES: If your bread machine doesn’t have a natural sourdough function, but it has a kneading function, do two cycles of kneading. Then allow the dough to just sit and rise for 6 hrs. Then use the bake function with a medium crust for a 2lb loaf.
