Spaghetti Squash Bowls
And that's the last of the spaghetti squash from our summer garden! It's amazing how long squash can last throughout the winter months. This meal is so incredibly easy to throw together and it's absolutely delicious! We loved this served with cheesy garlic sourdough bread and a Caesar salad. It's an excellent weeknight meal. ENJOY!
Ingredients
- 222 Spaghetti Squash
- 1 tsp1 tsp1 tsp Italian Seasoning

- 0.5 tsp0.5 tsp0.5 tsp Garlic Powder

- 0.5 tsp0.5 tsp0.5 tsp Himalayan Pink Salt

- 1 Tbsp1 Tbsp1 Tbsp Extra Virgin Olive Oil

- 0.5 cup0.5 cup0.5 cup Carrots, Finely Diced
- 0.5 cup0.5 cup0.5 cup Onion, Diced
- 0.5 cup0.5 cup0.5 cup White Mushrooms, Diced
- 1 lb1 lb1 lb 85% Lean Ground Beef - US Wellness Meats

- 24 oz24 oz24 oz Marinara Sauce, No Sugar Added
- 0.5 tsp0.5 tsp0.5 tsp Himalayan Pink Salt

- 0.5 tsp0.5 tsp0.5 tsp Garlic Powder

- 0.25 cup0.25 cup0.25 cup Parmesan Cheese

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Carefully slice the spaghetti squash in half, and remove the seeds.
- Brush the inside of the squash bowls with olive oil.
- In a small bowl combine the seasoning together and sprinkle evenly on the squash.
- Place the squash with the bowl side facing up in a baking dish.
- Bake at 375 for 45 minutes.
- While the squash is baking, make the meat sauce.
- In a medium sized sauté pan or skillet add all of the veggies and the ground beef.
- Cook on medium heat to crumble and brown the meat. Stirring occasionally.
- When the meat is done, add the sauce, salt, garlic powder, and Italian seasoning. Mix until fully combined.
- Simmer the sauce on low heat while the squash continues to bake.
- When the squash is done, carefully plate the squash on each of the dinner plates.
- Fill each bowl with the meat sauce and top with grated parmesan.
