Spicy Blood Orange Lamb Chops

Ingredients

- 1 tsp1 tsp1 tsp Fennel Seeds (Whole) - The Spice Lab
- 1.5 tsp1.5 tsp1.5 tsp Kosher Salt
- 0.25 cup0.25 cup0.25 cup Avocado Oil - Thrive Market
- .25 cup.25 cup.25 cup Blood Orange, juice only, approximately 2 oranges
- .25 cup.25 cup.25 cup Red Wine Vinegar
- .25 cup.25 cup.25 cup Blood Orange Habanero Jam - Profanity Jam, plus extra for serving (if desired)
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Place the lamb chops in an airtight container with the sliced shallot, crushed cardamom pods, fennel seeds, kosher salt, avocado oil, orange juice, and red wine vinegar. Toss to coat the chops evenly.
- Cover and marinate in the refrigerator for 4–6 hours, turning or tossing the chops every hour or so to ensure even flavor.
- Heat a cast iron skillet over medium-high heat until hot. Remove the lamb chops from the marinade and sear them on each side for 1–2 minutes until browned.
- Reduce the heat to medium-low. Spoon a couple of tablespoons of the jelly over the chops and baste with the pan juices for 2 minutes.
- Flip the chops, add a couple more tablespoons, and continue basting until the internal temperature reaches 140°F.
- Remove from the heat and let the lamb chops rest for 5 minutes before serving with extra jelly if desired.
