sweet. spicy. sticky. crunchy. 🔥🥢 this bowl is fusion at its finest — asian-inspired sticky chicken meatballs tossed in a sweet-heat sauce, paired with spicy masa cobanero “wonton” chips for that fiery crunch. wholesome, protein-packed, & the kind of bowl you’ll crave on repeat.

- 2 oz2 oz2 oz Traditional Tortilla Chips - Masa, I used the cobanero flavor

- 0.25 cup0.25 cup0.25 cup Golden Monkfruit Sweetener (with Allulose) - Lakanto

- 0.25 cup0.25 cup0.25 cup Cilantro
- 1 tsp1 tsp1 tsp Garlic Powder

- 1 tsp1 tsp1 tsp Onion Powder

- 0.5 tsp0.5 tsp0.5 tsp Ginger, Ground

- 0.5 tsp0.5 tsp0.5 tsp Gochugaru (Korean Chili Pepper Flakes)

- 0.5 tsp0.5 tsp0.5 tsp Salt and Pepper

meatballs
- preheat oven to 400.
- first add chips, monk fruit, cilantro, & seasonings to a food processor & blitz a few times into a finer crumble.
- to a bowl, add chip mixture & remaining meatball ingredients.
- using a very small cookie scoop, make meatballs of any size - I made super mini meatballs!
- place meatballs on a lined baking dish, then bake for 9-11 minutes (the smaller the meatball, the quicker they cook).
building the bowl
- make a batch of my gluten-free teriyaki sauce.
- make a batch of cilantro-lime cauliflower rice.
- to a bowl, add cilantro-lime cauliflower rice → meatballs → drizzle of extra sauce → crushed spicy masa “wonton” chips + any toppings & garnishes.
