Spicy Vodka Rigatoni with Sausage

Ingredients
- 16 oz16 oz16 oz Rigatoni Pasta

- 2 Tbsp2 Tbsp2 Tbsp Extra Virgin Olive Oil

- 111 Yellow Onion, diced
- 1 lb1 lb1 lb Italian Sausage, Hot, ground; or mild if you prefer

- 1 tsp1 tsp1 tsp Garlic Powder

- 2 tsp2 tsp2 tsp Oregano, Dried

- 0.5 tsp0.5 tsp0.5 tsp Red Pepper Flakes, more or less to taste

- 1 pinch1 pinch1 pinch Salt and Pepper, to taste
- 28 oz28 oz28 oz Crushed Tomatoes, 1 can
- 0.666 cup0.666 cup0.666 cup Vodka
- 5 oz5 oz5 oz Cream Cheese, Full Fat, plain
- 0.25 cup0.25 cup0.25 cup Parmesan Cheese, grated, plus more for topping

- 0.5 cup0.5 cup0.5 cup Basil, Fresh, plus more for topping

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- To a large sauce pan or dutch oven, add olive oil, onion, and a pinch of salt and pepper. Cook over medium heat for a few minutes, until onions begin to soften. Meanwhile begin to cook pasta separately according to package directions.
- Add ground sausage, and break into pieces. Cook for a few minutes.
- Add in garlic powder, oregano, red pepper flakes, salt and pepper. Stir, and cook for an additional 1-2 minutes.
- Pour in tomatoes and vodka, and simmer for 5 minutes.
- Add in cream cheese and parmesan cheese, and stir until dissolved.
- Add fresh basil, and stir to incorporate.
- When pasta is cooked, add it into your sauce and stir to coat.
- Serve with additional fresh basil and parmesan. Enjoy!
