Summer Peach Basil Salad
This salad is the perfect accompaniment to any Summer gathering.
It’s super refreshing and easy to put together! It combines the sweet flavors of seasonal peaches (or nectarines) and juicy red tomatoes together with the savory basil and shallots. I hope you enjoy it!
Ingredients
- 444 Peaches, sliced
- 1 bunch1 bunch1 bunch fresh Basil, chopped
- 1 pint1 pint1 pint Yellow Cherry Tomatoes, halved (can sub grape or red cherry tomatoes)
- 333 Shallot, thinly sliced
- 111 Lemon, juiced
- 3 Tbsp3 Tbsp3 Tbsp Extra Virgin Olive Oil
- 1 pinch1 pinch1 pinch Kosher Salt, to taste
- 1 pinch1 pinch1 pinch Black Pepper, to taste
- 1 Tbsp1 Tbsp1 Tbsp Honey, optional
- .5 cup.5 cup.5 cup Mozzarella Pearls, optional
- 111 Organic Balsamic Glaze, drizzle, optional

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Combine all ingredients in a bowl and mix. Let the flavors sit in the bowl in the fridge for about 20 minutes before serving.
- Enjoy with your favorite grilled protein for a clean delicious lunch of dinner!
Notes
Adding the mozzarella is optional, but I find it adds another level of flavor to this dish! Top with a drizzle of balsamic to bring it all together!
