Sundried Tomato Pesto
I literally make a batch of pesto every week. I love it with everything; eggs, soups, vinaigrettes, you name it. I decided to mix up my tradish pesto with some pepperoncini and sundried tomatoes which gave it such a gorgeous colour & flavour. Give it a try đŸ™‚
Ingredients
- 0.25 cup0.25 cup0.25 cup Pine Nuts
- 1 Tbsp1 Tbsp1 Tbsp Hemp Hearts
- 0.333 cup0.333 cup0.333 cup Grana Padano Cheese, finely shredded
- 3 Tbsp3 Tbsp3 Tbsp Extra Virgin Olive Oil, 3 - 4 Tablespoons. See Recipe.
- 0.5 Tbsp0.5 Tbsp0.5 Tbsp Peperoncini Peppers, in chili oil
- 3 whole3 whole3 whole Sun-Dried Tomatoes, chopped
- 2 cloves2 cloves2 cloves Garlic, smashed
- 0.5 whole0.5 whole0.5 whole Lemon, more if needed / desired for consistency & flavour
- 1 cup1 cup1 cup Basil, Fresh, packed cup
- 0.25 cup0.25 cup0.25 cup Parsley
- 0.25 tsp0.25 tsp0.25 tsp Himalayan Pink Salt, More To Taste
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Get the pine nuts in a dry skillet set to just below medium, and once heated, stir as needed until they're golden and toasted. Be careful, they can burn very easily so keep an eye on them. Remove them from the heat immediately and transfer them to a small bowl.
- Add everything to a small vortex blender starting with 3 Tbsp. EVOO and whiz until emulsified. Add additional oil if needed until the pesto comes together. Taste and adjust your salt / lemon if desired.
- Use immediately for a lovely pasta dish, spread, or an addition to a soup / sauce. Store in an airtight container in the fridge for up to four days.
Notes
- Servings depend on use. As a spread, a Tbsp. per person. Folded in to a soup or sauce, you may use all of it. It truly depends on the application.
