Healthy Superfood Chicken Salad with Kale and Curry
This salad is a guilt-free powerhouse of good quality ingredients packed with nutrient-dense superfoods: Kale, Brazil nuts, and pomegranate seeds. The base of yogurt and lemon brings tang and acidity. However, you will need a small amount of fat in order to keep the texture luscious, especially for refrigerated leftovers or portions stored for meal prep. Just opt for whole mayo or some swigs of extra virgin olive oil. A hefty tablespoon of your favorite curry powder adds earthy flavor and pairs well with limes if you don’t have lemons.
