Sweet Potato and Chicken Patties (Edit recipe)

If you want to change up your usual Chicken burgers, you need to give these Sweet Potato Chicken Patties a try. They are wonderful to meal prep and eat throughout the week for breakfast, lunch or dinner.  To make these patties, all you need is some ground chicken, a sweet Potato, an egg, some spices & herbs. Occasionally, I love to also sneak in kale or spinach for some extra nutrition. If you are not a fan of ground chicken, you can substitute it with ground turkey. I love pairing these with Ranch dressing but use any aioli or even guacamole. These are also Whole30, Gluten-free and Dairy-free.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Combine all the ingredients (except the oil) and form into small meatballs. Then flatten them into patties.
  2. In a pan, heat oil.
  3. Cook patties for about 3-4 mins on each side or until fully cooked.
  4. Serve these patties with some Ranch dressing, add to your salad bowl or enjoy it as a burger wrapped in lettuce.
