Tender Shredded Pork in Salsa Verde
Tender Shredded Pork in Salsa Verde is flavorful shredded pork mixed into a tangy and spicy salsa made with jalapeños, tomatoes, and tomatillos.
Ingredients
- 3-4 cups3-4 cups3-4 cups Pork Shoulder, or other pork, shredded
- 444 Jalapeño
- 666 Tomatillo
- 5-65-65-6 Cherry Tomato
- .25 cup.25 cup.25 cup Chicken Broth
- .5 cup.5 cup.5 cup Water
- 222 Garlic, small cloves
- 1 tsp1 tsp1 tsp Salt
- .25 tsp.25 tsp.25 tsp Ground Cumin, ground
- .25 tsp.25 tsp.25 tsp Black Pepper
- 2 Tbsp2 Tbsp2 Tbsp Extra Virgin Olive Oil, or other cooking oil

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Fill a medium pot with water and bring to a boil. Add the jalapeno and boil for 5 minutes. Then add the tomatillos and tomatoes.
- Boil until the tomatillos and tomatoes are fork tender but not falling apart. This should take approximately another 8 minutes.
- Place the jalapeno, tomatoes, and tomatillos (with skin and all) into a blender or food processor.
- Add the chicken broth (check ingredients for Whole30), water, garlic cloves, salt, cumin, and black pepper.
- Blend until smooth.
- In a large saucepan or medium pot, add 2 tablespoons of oil. Once hot, add the salsa verde and bring it to a simmer.
- Simmer on medium-low heat until the top of the sauce develops a light brown foam.
- Add the shredded pork. Mix so the pork is fully incorporated into the sauce and continue simmering for another 5 minutes.
- Serve
Notes
To speed up the prep time, you can plan ahead and cook the pork the night before or in the morning. // This recipe is Whole30 compatible, just be sure to use a chicken broth that is Whole30 compatible.
