Tuscan Chicken & Vegetables
If you know me then you know I love a one pot meal. This dish is filling and hearty, perfect for a cool evening.
Ingredients
- 2 Tbsp2 Tbsp2 Tbsp ARGILOS IV MILD Extra Virgin Olive Oil (500ml) - Argilos

- 333 Chicken Breasts, Boneless Skinless

- 1 tsp1 tsp1 tsp Sea Salt

- 1 tsp1 tsp1 tsp Black Pepper

- 1 tsp1 tsp1 tsp Italian Seasoning

- 111 Yellow Squash, or other squash, sliced
- .5.5.5 Red Onion, small dice
- 1 head1 head1 head Broccoli, cut into small florets
- 1 cup1 cup1 cup Sugar Snap Peas, ends cut off, cut in 1/3
- .5.5.5 Bell Pepper, any color, diced
- 333 Sun-Dried Tomatoes, chopped
- 3 cloves3 cloves3 cloves Garlic, minced

- 1 cup1 cup1 cup Baby Spinach
- 1 cup1 cup1 cup Chicken Bone Broth

- .5 cup.5 cup.5 cup Plain Greek Yogurt
- .25 cup.25 cup.25 cup Basil, Fresh, sliced thin

- .5 cup.5 cup.5 cup Parmesan Cheese, grated

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a large skillet add oil and chicken. Cook on medium heat for 4 minutes per side.
- Add all veggies, stir as best you can.
- Sprinkle salt, pepper, and Italian seasoning on top of chicken and vegetables. Cook for 4-5 minutes.
- Make a well in the middle of the pan by moving the veggies around.
- Add broth and yogurt. Stir up with fork to combine.
- With a spoon or tongs move veggies around until the broth mixture and vegetables are more evenly coated.
- Cover and cook on medium-low for 5-7 minutes. Check temperature of thickest part of chicken. It must be 165 degrees to be safe to consume.
- Once done add basil and grated cheese on top and enjoy.
Notes
The vegetables are the star of this dish. Feel free to use other vegetables you like or that are in season. Zucchini, green beans, cauliflower, or chard all work fabulous.
