If you know me then you know I love a one pot meal. This dish is filling and hearty, perfect for a cool evening.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. In a large skillet add oil and chicken. Cook on medium heat for 4 minutes per side.
  2. Add all veggies, stir as best you can.
  3. Sprinkle salt, pepper, and Italian seasoning on top of chicken and vegetables. Cook for 4-5 minutes.
  4. Make a well in the middle of the pan by moving the veggies around.
  5. Add broth and yogurt. Stir up with fork to combine.
  6. With a spoon or tongs move veggies around until the broth mixture and vegetables are more evenly coated.
  7. Cover and cook on medium-low for 5-7 minutes. Check temperature of thickest part of chicken. It must be 165 degrees to be safe to consume.
  8. Once done add basil and grated cheese on top and enjoy.

Notes

The vegetables are the star of this dish. Feel free to use other vegetables you like or that are in season. Zucchini, green beans, cauliflower, or chard all work fabulous.
