White Cheddar Mexican Meatballs

Ingredients

- 1/4 cup1/4 cup1/4 cup Cilantro, chopped
- 1/4 cup1/4 cup1/4 cup Onion, finely chopped
- 2 cloves2 cloves2 cloves Garlic, minced

- 1 tsp1 tsp1 tsp Cumin, Ground

- 1 tsp1 tsp1 tsp Smoked Paprika
- 1/2 tsp1/2 tsp1/2 tsp Chili Powder
- 1/2 tsp1/2 tsp1/2 tsp Salt

- Olive Oil

- Preheat the oven to 350°F.
- Pulse the cob in a blender until it forms breadcrumb-sized pieces.
- In a bowl, combine ground beef, pulsed cob, egg, cilantro, onion, garlic, and spices. Mix until well incorporated.
- Roll the mixture into 1-inch balls and place them on a plate.
- Heat a pan over medium heat with a little olive oil. Sear the meatballs for about 2-3 minutes per side until golden brown.
