Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Fill a large pot 3/4 of the way full with water and bring to a boil.
  2. Peel and cut the potatoes into 1 inch chunks, add them to the boiling water and boil until fork tender, about 15 minutes. *You can leave the skins on or peel them off
  3. Once the potatoes are fork tender drain the water out and add them to a large food processor.
  4. To the food processor, add the ghee, milk, and seasonings.
  5. Blend on high for 30 minutes or until silky smooth.
  6. Remove from food processor and serve.

Notes

Potatoes- You can use any kind of potatoes in this recipe. You can use Yukon gold potatoes or red potatoes, but I think the best potatoes to use are russet potatoes. Garlic powder- If you don't have garlic powder, a great option is using minced garlic. Diary-free milk- I use unsweetened almond milk but you can use whatever unsweetened milk you like. Another great substitute would be using full-fat coconut milk or coconut cream. You could also use unsweetened oat milk, but that would make this recipe no longer Whole30. Be sure to read your milk labels to keep this Whole30! Ghee- If you have a severe dairy allergy then you can use olive oil or vegan butter in place of ghee. Can you eat mashed potatoes on Whole30? Yes! As long as they are made with non dairy unsweetened milk and ghee instead of milk, cream, and butter. Why are potatoes allowed on Whole30? Potatoes are allowed on Whole30 because they are a good source of vitamin c, potassium, and fiber! If you want to take these potatoes to the next level here are a few things you can add. You can add ¼ cup of Kite Hill Sour Cream and ¼ cup of Kite Hill Cream Cheese. Both of these are Whole30! Fresh herbs like rosemary, parsley, and/or chives Top with Whole30 bacon crumbles To get the most perfect creamy texture to these mashed potatoes you need to blend them. I usually use a large food processor but if you don't have one you can use a blender, stand mixer, hand mixer, or immersion blender. If you don't have any of these you can use a potato masher. You need a large food processor to fit everything into it. If you don't have a large food processor then I would opt for one of the suggestions above.
