Yule Log (Paleo/Gluten Free)
A cake version of the European winter tradition of burning a selected "Yule" log during the winter solstice festivities. This one was so fun to create! A simple variation of my SWISS ROLL recipe that is sure to bring a smile to your face. A perfect addition to any holiday dessert table this season!
Ingredients

- 1 whole1 whole1 whole Swiss Roll (Paleo/Gluten Free) (click for recipe)
Chocolate Frosting
- .25 cup.25 cup.25 cup Ghee, can sub softened butter
- 4 oz4 oz4 oz Kite Hill Cream Cheese, can sub standard cream cheese
- 1 Tbsp1 Tbsp1 Tbsp Cocoa Powder, heaping, or more depending on how dark you'd like your frosting
- 1.75 - 2 cups1.75 - 2 cups1.75 - 2 cups Powdered Sugar, or more depending on consistency desired, can sub maple powdered sugar
- 1 tsp1 tsp1 tsp Pure Vanilla Extract

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Follow steps 1-11 for the SWISS ROLL recipe. Placing filled roll on a serving platter instead of a cooling rack.
- Make chocolate frosting by adding ghee, cream cheese and cocoa to a 4 cup mixing bowl. Whip until fully combined, then add up to 2 cups of the powdered sugar and the vanilla extract. Whip again until fully combined.
- Cut about 2 ¾”-3” off one end of the roll, then cut that diagonally in half. Affix one half to the side of the roll using a dollop of the frosting to form a branch. Enjoy that other half as you’d like or add another branch on the opposite side!
- Using a small spatula, frost the entire roll including the ends if desired, or leave them bare, exposing the fun roll whipped cream center! You can use the spatula to create the look of bark, have fun here and decorate/garnish as desired and serve.
