Apple Cider Pie Filling (Edit recipe)

All the amazing flavors of apple pie, kicked up a notch by simmering those apples in apple cider! Lightly sweetened with coconut sugar along with warm spices, can your taste buds even handle how scrumptious this is!? Prep this filling ahead of time so the apple pie of your dreams can be ready in a jiffy the day of your big meal! We used a few honeycrisp apples, but feel free to use your favorite cooking apple!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Place apples in a medium sized stock pot. Add lemon juice, coconut sugar, cinnamon, nutmeg, salt and 1 cup of the apple cider to the apples and toss to coat. Let them sit for 10 minutes.
  2. Place pan of apples over medium heat, cook until the apples are soft. Probably around 11-13 minutes.
  3. In a small bowl add the remaining half cup of apple cider and the cassava flour. Whisk to combine well and make a slurry. Pour into the apple mixture and stir. Cook until thickened.
  4. Remove from the heat, add vanilla and ghee. Stir to combine well and place in the refrigerator and use within a week or freeze for up to 3 months.
  5. Use to make an apple pie, our apple hand pies or even a tasty waffle topper.

Notes

You should end up with approximately 4 cups of pie filling, which is perfect for a traditional 9" pie. You can also use this filling for making our "glazed apple hand pies" or our "apple pie puffins" which you'd need around 3/4 of a cup of for each recipe. It's also delicious on top of waffles or pancakes!!
