Chocolate Chip Zucchini Cookies

Whether you’re a zucchini lover or hater it doesn’t matter - you can’t taste the zucchini in these fabulous cookies. Grab that garden zucchini and get baking!
Ingredients
- 0.5 cup0.5 cup0.5 cup unsweetened Apple Butter, + 2 TBS
- 0.25 cup0.25 cup0.25 cup Peanut Butter
- 1 tsp1 tsp1 tsp Vanilla Extract
- 1.25 cup1.25 cup1.25 cup One Degree Organic Oats
- 0.333 cup0.333 cup0.333 cup Zucchini, shredded and liquid squeezed out
- 1 tsp1 tsp1 tsp Ground Cinnamon
- 0.5 tsp0.5 tsp0.5 tsp Baking Powder
- 0.25 cup0.25 cup0.25 cup Pascha 55% Organic Vegan Semi-Sweet Dark Chocolate Chips

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Mix the first 3 ingredients together and then add the dry ingredients aside from the zucchini and chocolate chips.
- Once mixed, fold in the zucchini and chocolate chips.
- Take a cookie scoop and scoop onto parchment lined baking sheet and press down and form into cookies (these won’t spread and you can form them thick).
- Bake at 350 for 15 min. Let cool for 10 min before removing from baking sheet and eating!
