Finding ways to enjoy our favorite treats while nourishing our bodies can be a challenge. With a little creativity, we can transform classic summer treats into guilt-free pleasures. These wholesome peaches and cream popsicles with the added nuttiness of pecans are the perfect healthy summer treat. It's the season of succulent ripe peaches and these popsicles are a delicious celebration of summer's sweetness!!. Roasting the peaches intensifies the flavors even more.  Cream is replaced by non fat greek yogurt which also adds a boost of protein and refined sugar is replaced by honey.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Pre-heat oven to 400 degree Fahrenheit
  2. Put the peach slices on a cookie sheet. Drizzle with a little bit of the honey and sprinkle with salt
  3. Bake for 30 minutes
  4. Put aside 1/4 of the peach slices and dice these
  5. Add the rest of the peaches, greek yogurt, vanilla essence and the remaining honey and blend till smooth
  6. To the popsicle molds, add the peach and yogurt blend. Leave some space at the top of the mold
  7. Add some diced peaches and chopped nuts and push them into the mound with a butter knife
  8. Freeze for at least 4 hours or overnight
