Whole30 Chicken Shwarma
Ingredients
For Chicken Shwarma
- 2 lb2 lb2 lb Boneless Skinless Chicken Thigh
- 1 tsp1 tsp1 tsp Onion Powder
- 1 tsp1 tsp1 tsp Ground Cumin
- 1/2 tsp1/2 tsp1/2 tsp Turmeric
- 1/2 tsp1/2 tsp1/2 tsp Cayenne Pepper
- 1/2 tsp1/2 tsp1/2 tsp Ground Cinnamon
- 1 tsp1 tsp1 tsp ground Coriander
- 1/2 tsp1/2 tsp1/2 tsp Cardamom Seed, powder
- 1 tsp1 tsp1 tsp Kosher Salt
- 3 Tbsp3 Tbsp3 Tbsp Avocado Oil
- Sumac, powder for garnish
For Garlic Sauce
- 1/2 cup1/2 cup1/2 cup Mayonnaise, Whole30/Paleo compliant
- 1-2 cloves1-2 cloves1-2 cloves Garlic, finely grated
- 2 Tbsp2 Tbsp2 Tbsp Lemon Juice

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
For Garlic Sauce
- Add mayo, garlic and lemon juice to a small mixing bowl. Stir until fully combined. Cover and refrigerate until ready to serve.
For Chicken Shwarma
- Rinse and pat chicken dry with paper towel. Slice into thin strips, width-wise, and transfer to mixing bowl along with all of the spices and 2 tbsp avocado oil.
- Preheat cast-iron skillet over med-high heat. Add 1 tbsp of avocado oil and the chicken. Spread meat evenly across the pan and cook undisturbed until browned (approx. 6-8min). Note: you may have to cook in batches so as not to overcrowd the pan. Flip chicken and cook additional 4-5 minutes or until fully cooked through and crispy.
- Serve shwarma with a side salad, potatoes and/or cauliflower rice. Drizzle garlic sauce overtop and season everything with a dash or two of sumac.

I’ve made this a few times and it’s absolutely the real deal with zero fuss. The garlic sauce is unbelievably easy and so good I’m always making it to have on hand. Just seeing this is a reminder it’s been too long since I made this, so to my upcoming meal plan it goes.
