Chocolate Strawberry Banana Frozen Yogurt Clusters (Vegan, Gluten-Free)

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Line an 11” x 17“ rimmed sheet pan with parchment paper.
- Arrange banana slices on parchment-lined sheet pan, spacing 2-inches apart.
- Combine strawberry yogurt and crispy rice cereal in bowl. Spoon 1 1/2-to-2 tablespoons yogurt mixture over each banana slice, covering each slice.
- Please baking sheet in freezer for at least 90 minutes, or until clusters are frozen.
- Place chocolate chips in a medium, microwave-safe bowl. Microwave for 30 seconds; stir. Continue to microwave in 15-second intervals, stirring in between, until chocolate is just melted and smooth.
- Dip each frozen cluster in melted chocolate, spooning chocolate over the top to fully cover each cluster. Drain excess chocolate back into bowl, then place chocolate-covered cluster back on parchment-lined sheet pan. Chocolate will harden.
- Store leftover clusters in freezer. Let sit at room temperature for 10-15 minutes before eating.
Notes
For a thinner chocolate exterior, instead of using 3 cups chocolate chips, use 2 1/4- 2 1/2 cups chocolate chips with 1 tablespoon organic, virgin coconut oil added to the bowl prior to melting chips in the microwave. The coconut oil will thin out the chocolate, allowing for a thinner chocolate shell surrounding the frozen yogurt clusters. If you prefer a thicker chocolate shell, stick with the recipe as written above.
