Chocolate Granola Crispy Treats (Gluten-Free, Vegan, Peanut-Free)
A delicious twist on the classic rice crispy treat. Crunchy granola is mixed with crispy rice cereal and melted vegan marshmallows; topped with a luscious layer of chocolate sprinkled with coarse sea salt, this is the best combination of sweet & salty! Ingredients
- 5 Tbsp5 Tbsp5 Tbsp Plant Based Butter
- 10 oz10 oz10 oz Vanilla Vegan Marshmallows, (10oz bag of regular-size vegan marshmallows)
- 5 cups5 cups5 cups Rice Krispies Cereal
- 1 cup1 cup1 cup Gluten-Free Granola, (I used peanut-free granola)
- 2 cups2 cups2 cups Pascha 55% Organic Vegan Semi-Sweet Dark Chocolate Chips, Melted
- 1 Tbsp1 Tbsp1 Tbsp Coconut Oil
- 1 tsp1 tsp1 tsp Sea Salt, I used extra coarse sea salt

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Lightly mist an 11” x 7” glass baking dish with nonstick spray.
- Melt plant butter in large pot over medium low heat.
- Add marshmallows, stirring frequently until melted. Remove pot from heat.
- In large bowl, combine crispy rice cereal with granola. Add to melted marshmallow in pot; stir to combine.
- Quickly spoon mixture into prepared glass baking dish; spreading out with spatula to fit dish.
- Please chocolate chips and coconut oil in microwave-safe bowl. Microwave on high for one minute; stir. Microwave for additional 30 seconds; stir. Continue microwaving in 10-second intervals, stirring in between, until chocolate is just melted and smooth.
- Pour melted chocolate over crispy treats, spreading out with spatula to cover top.
- Sprinkle with sea salt, if using. Allow chocolate to set before slicing. Slice into desired number of squares. Cover leftovers with plastic wraps and store at room temperature for up to 2 days. Serves 10+.
