Inspired by the popular ice cream flavor, these mint chocolate chip energy bites with matcha are the perfect afternoon snack! These little bites of goodness are seriously mind blowing. They're high in protein and nutrient dense, with ingredients like almond flour, cashew butter, and energizing matcha green tea powder. The flavor is on point, and the crunch from the cacao nibs is just divine.
Ingredients

- 0.25 cup0.25 cup0.25 cup Vanilla Protein Powder, or more almond flour

- 0.5 cup0.5 cup0.5 cup Cashew Butter
- 0.25 cup0.25 cup0.25 cup Pure Maple Syrup, or agave
- 1 tsp1 tsp1 tsp Vanilla Extract
- 0.25 tsp0.25 tsp0.25 tsp Peppermint Extract
- 0.25 cup0.25 cup0.25 cup Dark Chocolate Chips
- 0.25 cup0.25 cup0.25 cup Organic, Raw Cacao Nibs, or more chocolate chips

- In a medium mixing bowl, stir together almond flour, protein powder, matcha, blue spirulina if using, and salt.
- Add in cashew butter, maple syrup, vanilla extract, and peppermint extract and stir until well combined, using your hands to mix if needed.

- Roll into balls. Enjoy right away or place in the fridge for 1 hour to firm up.
