Homestyle Rice Cereal Treats
These Homestyle Rice Cereal Treats are easy to make and uber delicious. They have a subtle buttery hint of nuttiness from the nutritional yeast, and a light sweetness from the melted marshmallows. Plus, they are dairy-free and gluten-free, so everyone can enjoy them.
Ingredients
- 6 Tbsp6 Tbsp6 Tbsp Coconut Oil, Refined
- 1 Tbsp1 Tbsp1 Tbsp Nutritional Yeast
- 2 tsp2 tsp2 tsp Vanilla Extract
- .25 tsp.25 tsp.25 tsp Salt
- 2-10 oz2-10 oz2-10 oz Mini Marshmallows, Bags
- 12 oz12 oz12 oz Brown Rice Crisps

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Line a 9" x 13" baking pan with parchment paper, lightly grease, and set aside.
- In a large pot, melt refined coconut oil over low heat.
- Add in nutritional yeast and mix until combined.
- Reserve 1-1/2 cups of mini marshmallows. Melt marshmallows into the coconut oil and nutritional yeast mixture. Stir occasionally until the marshmallows are almost completely melted. This will take about 5-10 minutes depending on the type of stove you use and the size of your pan.
- Stir in vanilla and salt.
- Remove from heat. Add rice cereal into the marshmallow mixture.
- Once the rice cereal and marshmallow mixture is completely incorporated, add in the reserved marshmallows.
- Transfer to the baking pan.
- Wet hands with water and press mixture into pan, distributing evenly.
- Cool to room temperature (about an hour) and cut into 12 squares
- Serve and enjoy!
