Spooky Haystacks (gluten free) (Edit recipe)

A free form treat that is certainly a bit silly, so why not add a white chocolate drizzle along with a few candy eyeballs to make them look like lil’ spooky mummies!? If you don’t have the patience to add the “mummy wrap” you can simply add some festive halloween sprinkles. Make these as big or small as you like, no rules here in that regard.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Line two standard baking sheets with parchment paper.
  2. Add chow mein noodles and nuts to a large bowl and set aside.
  3. Over a double boiler, add chocolate chips and coconut oil, stirring as it melts to fully combine. When chocolate is fully melted, add nut butter and stir to combine.
  4. Pour warm chocolate/nut butter mixture over dry ingredients, stir to fully coat
  5. Drop scoops of haystacks on the prepared baking sheet, using the spoon to stack as needed. Add googly eyes while warm and sprinkles if desired.
  6. If desired melt white chocolate (and sweet potato powder if using) in a small bowl in the microwave in short bursts til melted and drizzle over haystacks to create a “mummy wrap” adding more sprinkles if desired. Enjoy once they are set up!
