Apple Pie Stuffed Dates

- 12 whole12 whole12 whole Medjool Dates, Pitted
- 1 whole1 whole1 whole Granny Smith Apple, Peeled and diced
- 1 Tbsp1 Tbsp1 Tbsp Coconut Sugar, Unrefined
- 1 tsp1 tsp1 tsp Ceylon Cinnamon
- 0.5 Tbsp0.5 Tbsp0.5 Tbsp Arrowroot Flour
- 0.5 cup0.5 cup0.5 cup Water
- 2 Tbsp2 Tbsp2 Tbsp Pecans, Chopped

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Saute diced green apple on stovetop over medium low heat with cinnamon, coconut sugar, and 1/4 cup of water for about 5 minutes, stirring occasionally.
- Mix arrowroot flour with 1/4 cup of water in a small bowl and add to apple comote. This will thicken the mixture to look like apple pie filling! Set aside.
- Prepare your dates by slicing the tops. Remove the pit and arrange dates on a plate.
- Fill each date with about 1 Tbsp apple pie filling, top with chopped pecans and enjoy!
Notes
