Mediterranean Power Protein Bowl
I love a great dinner in a bowl, packed with my favorite protein, grains, veggies and a delicious sauce! One of my favorite dinner bowls is a Mediterranean inspired protein power bowl filled with chicken meatballs, quinoa, sweet potatoes, and more! Dive in to this highly customizable, protein packed meal!
Ingredients
- 111 Meatballs, or any serving of your preferred protein of choice
- 0.25 cup0.25 cup0.25 cup Tri-Color Quinoa
- .25 cup.25 cup.25 cup Sweet Potato, roasted
- 0.25 cup0.25 cup0.25 cup Grape Tomatoes
- 0.25 cup0.25 cup0.25 cup Cucumber
- 2 Tbsp2 Tbsp2 Tbsp Feta Cheese
- 2 Tbsp2 Tbsp2 Tbsp Chickpeas, roasted
- 2 Tbsp2 Tbsp2 Tbsp

Notes
This is one of my favorite meals to make because it is so customizable. I'll have chicken meatballs, ground beef, or salmon as the protein. If I am feeling fancy I'll make a little salad with the tomato and cucumber. And it's even better when I have homemade pickled red onions on hand!
