Peppermint Cheesecake Brownie Bites
Brownie Bites but make the gut friendly! Use any brownie mix you like here and prepare as directed but level them up with a cheesecake swirl and some peppermint tea!
Ingredients
- 1 whole1 whole1 whole Legit Brownie Mix - Legit Bread Company, any brownie mix

- 2 whole2 whole2 whole Eggs
- .5 cup.5 cup.5 cup Vanilla Greek Style Yogurt - Kite Hill, yogurt of choice
- 2 Tbsp2 Tbsp2 Tbsp "Peppermint Mocha" Faux Joe Coffee Alternative (Loose Leaf) - Sip Herbals

- .25 cup.25 cup.25 cup Dairy-Free Cream Cheese - Kite Hill
- .25 cup.25 cup.25 cup Greek Style Yogurt, Plain Unsweetened - Kite Hill
- .25 cup.25 cup.25 cup Powdered Monkfruit Sweetener - Lakanto

- 1 tsp1 tsp1 tsp Vanilla Extract

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Prepare brownies per package directions (I used 2 eggs, 1/2 cup yogurt and added in the Sip Herbal Tea into the mixture).
- Scoop mixture into greased muffin tins or an 8x8 baking dish
- Combine the cheesecake topping and gently dollop a spoonful of the filling onto each bite (or baking dish)
- Using a knife or toothpick swirl the mixture together.
- Bake in the oven at 350F for 25-30 min or until a toothpick inserted comes out clean.
- Let cool for 10-15 minutes and enjoy
