Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Sweet Potatoes:
  2. Wash and dice the potatoes
  3. Add remaining ingredients and toss until coated with seasoning
  4. Bake at 375 until tender (20-30 min)
  5. Ground meat:
  6. In a pan heat olive oil and then cook ground meat until 165F (brown throughout)
  7. Add in taco seasoning and 1-2 tbsp water if desired.
  8. For the tofu:
  9. Drain excess liquid from the tofu
  10. Break the tofu up into small pieces and add it to a food processor.
  11. Add all of the remaining ingredients and process until smooth and creamy
  12. Plate and serve with remaining toppings
