Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a medium bowl, mix peanut butter, honey or maple syrup, protein powder, coconut flour, and sea salt until a thick dough forms. Adjust with a little extra flour if the mixture is too sticky.
- Scoop about 1 tablespoon of the dough and roll into balls. Place on a parchment-lined tray and freeze for 20-30 minutes until firm.
- Melt dark chocolate chips and coconut oil in the microwave in 20-second increments, stirring until smooth.
- Remove the balls from the freezer. Use a toothpick or fork to dip each ball into the melted chocolate, leaving a small portion of the peanut butter exposed on top for the classic "buckeye" look.
- Return the chocolate-dipped buckeyes to the parchment-lined tray. Refrigerate or freeze until the chocolate is fully set.
- Enjoy chilled for the best texture. Store leftovers in an airtight container in the fridge or freezer.
