Jam Thumbprint Cookies (grain-free/vegan)
The easiest cookies you'll ever make! With just three ingredients needed for the cookie (with an optional fourth) and your choice of jam as filling, you'll be shocked at how easy yet delicious these cookies are.
Ingredients
- 1 cup1 cup1 cup Almond Flour
- 3 Tbsp3 Tbsp3 Tbsp Coconut Oil, soft
- 2 Tbsp2 Tbsp2 Tbsp Pure Maple Syrup
- 0.25 tsp0.25 tsp0.25 tsp Pure Vanilla Extract, optional
- 0.25 cup0.25 cup0.25 cup Raspberry Jam, or jam of choice

- Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
- In a bowl, combine almond flour, coconut oil, maple syrup and vanilla extract, if using.
- Roll dough into 10 balls.
- Using a teaspoon, press down on dough balls to make an indent.
- Fill each indentation with jam.
- Bake for 8-10 minutes or until golden brown.
- Let cool completely to firm up.

Not vegan? Swap the coconut oil for butter!
