Ingredients

- 0.5 cup0.5 cup0.5 cup Light Brown Sugar
- 111 Egg
- 2 tsp2 tsp2 tsp Vanilla Extract
- 1.5 cup1.5 cup1.5 cup Gluten Free 1-to-1 Baking Flour (Bob's Red Mill)
- 0.333 cup0.333 cup0.333 cup Cocoa Powder
- 0.25 tsp0.25 tsp0.25 tsp Salt
- 0.5 tsp0.5 tsp0.5 tsp Baking Soda
- 0.5 tsp0.5 tsp0.5 tsp Baking Powder
- 0.5 cup0.5 cup0.5 cup Mini Marshmallows
- 0.5 cup0.5 cup0.5 cup Semi-Sweet Chocolate Chunks

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a large bowl mix flour, baking soda, salt and baking powder together with a whisk
- Add in cocoa powder and whisk
- In a separate bowl cream together butter and brown and white sugar
- Add in the egg and mix with a hand mixer
- Following vanilla extract
- Add the dry ingredients to the wet ingredients and mix together
- Add in the chocolate chunks
- Preheat the oven to 375
- Using a small cookie scoop onto parchment paper
- Bake for 9 minutes and add 2-3 mini Marshmallows to the center of each cookie
- Bake for another two minutes
Notes
Make sure you don't wait until the end to add the marshmallows as the cookie won't be as gooey. You can use a mixture of dark chocolate chunks and semi sweet if you'd like.
