Simple Birthday Cake (Edit recipe)

This simple, delicious birthday cake is actually quite healthy. It’s only sweetened with maple syrup and it has very minimal ingredients. Forget store bought, this one is easy and perfect for any birthday party. You can double the recipe to make more, but this one made 2, 6 inch round cakes. I used miss jones vanilla frosting, but I put a recipe for a simple butter cream in case you want to make your own!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat oven to 350 degrees.
  2. In a mixing bowl, whisk together the eggs, maple syrup, olive oil, and vanilla extract. Add in almond flour, all purpose flour, and baking powder. Mix together.
  3. Pour into two 6 inch greased round pans (or pans of choice). Place in the oven. Bake for 18-20 minutes or until golden brown, and cooked all the way through.
  4. Frost and enjoy!

Notes

I used Miss Jones Vanilla Frosting for the cake. You don’t have to make your own! I put a simple recipe for a frosting just in case you want to. If you want to swap the all purpose flour with gluten free all purpose flour, it should work almost the same.
