Birthday Cake Cheesecake Cookie Sandwiches (Edit recipe)

These birthday cake cheesecake cookie sandwiches sound like a mouthful, but I promise, they are super easy to make. I’m a sucker for an easy recipe, especially as a busy mom. Miss Jones now has a gluten free yellow cake mix and it’s amazing! I combined their new cake mix with an egg and yogurt to create a cheesecake cookie. Then I stuffed it with frosting and added sprinkles to give it birthday cake vibes! I hope you enjoy!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. 1. Preheat your oven to 350 degrees and line a baking pan with parchment paper. Set aside!
  2. 2. In a mixing bowl, combine cake mix, egg and Greek yogurt. Whisk it together until your cookie dough forms.
  3. 3. Drop cookie dough onto parchment paper using a cookie scoop. The cookie dough will not be super firm.
  4. 4. Place pan in the oven and bake for 12-15 minutes. You don’t want the cookies to be super crunchy.
  5. 5. Let the cookie cool. Once cooled, stuff them with the frosting and make a cookie sandwich. Dip in the sprinkles. Enjoy!

Notes

You can use whatever cake mix you want to replace the gluten free yellow cake mix. The Greek yogurt could be substituted for butter or a dairy free yogurt as well.
