Dye-Free Funfetti Sugar Cookies (Vegan/Nut-Free)
Chewy, thin & crispy-edged, these funfetti sugar cookies are prepped & ready for the oven in under 10 minutes & baked in under 10 minutes too. No dough chilling time required. No dairy. No egg. No one would ever know. The perfect cookie to brighten someone’s day.
Ingredients
- 0.5 cup0.5 cup0.5 cup Plant-Based Butter, Softened at room temperature
- 0.5 cup0.5 cup0.5 cup Cane Sugar, I used organic
- 0.25 cup0.25 cup0.25 cup Powdered Sugar, I used organic
- 1.5 tsp1.5 tsp1.5 tsp Pure Vanilla Extract

- 3 Tbsp3 Tbsp3 Tbsp Water, Room temperature water
- 0.5 tsp0.5 tsp0.5 tsp Apple Cider Vinegar
- 1 cup1 cup1 cup All Purpose Flour
- 0.5 tsp0.5 tsp0.5 tsp Baking Soda
- 0.25 tsp0.25 tsp0.25 tsp Salt

- 0.333 cup0.333 cup0.333 cup Rainbow Sprinkles - Color Kitchen Foods, Or other dye-free sprinkles; plus 1 additional Tbsp for sprinkling over tops before baking

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 325°. Line 2 cookie sheets with parchment paper.
- In large bowl, use hand mixer on medium speed to beat plant butter, sugars, vanilla, water & vinegar until combined.
- In medium bowl, whisk to combine flour, baking soda & salt.
- Add dry mixture to bowl with plant butter mixture. Beat to combine.
- Add sprinkles; stir to combine.
- Use 1 Tbsp cookie scoop to scoop dough, spaced 2-inches apart, onto prepared cookie sheets. Lightly sprinkle tops with additional sprinkles.
- Bake on middle rack of oven for 8-9 minutes (cookies may appear slightly under-cooked which is ok). Cool 5 minutes before transferring to wire rack to continue cooling. Serve at room temperature. Makes 22 cookies.
Notes
Store cookies in a single layer, in an airtight container (separated by parchment paper), at room temperature for up to 5 days. By day 2, leftover cookies will lose the “crispy edges” and just be soft & chewy. Plant-based. Vegan. Dairy-free. Egg-free. Nut-free. Dye-free.
