Valentine’s Day Garlic Butter Shrimp Pasta

Ingredients
- 16 oz16 oz16 oz Pasta, Any pasta will work but I used Trader Joe's heart shaped pasta
- 5 Tbsp5 Tbsp5 Tbsp Butter, Unsalted
- 0.75 cup0.75 cup0.75 cup Panko Bread Crumbs
- 0.5 tsp0.5 tsp0.5 tsp Red Pepper Flakes
- 1 whole1 whole1 whole Lemon, zest and juice
- 0.25 tsp0.25 tsp0.25 tsp Kosher Salt
- 1 Tbsp1 Tbsp1 Tbsp Olive Oil
- 1 whole1 whole1 whole Shallot, diced
- 2 cloves2 cloves2 cloves Garlic, minced
- 1 cup1 cup1 cup Tomato, Cherry, halved
- 2 Tbsp2 Tbsp2 Tbsp Tarragon, Fresh, to taste
- 0.25 cup0.25 cup0.25 cup White Wine
- 0.5 lb0.5 lb0.5 lb Shrimp, Raw, I used Argentinian shrimp, defrosted
- 0.25 cup0.25 cup0.25 cup Parmesan Cheese, grated (for serving)

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Bring a large pot of salted water to a boil and cook the pasta according to the package instructions. Reserve 1/2 cup of pasta cooking water before draining.
- While the pasta is cooking, heat a large skillet over medium heat with two tbsp of butter. Add the panko, ¼ tsp red pepper flakes, and ½ of the lemon zest. Stir to coat the panko and cook for 4-5 minutes, stirring occasionally, until the panko is lightly toasted. About a minute before removing it from the heat, add half the lemon juice with a pinch of salt, stir, and transfer the toasted panko to a plate.
- In the same pan, add 1 tbsp of olive oil and 3 tbsp of butter. Add the shallots, garlic, and ¼ tsp red pepper flakes, and cook until fragrant, about 1 minute. Add the halved cherry tomatoes, tarragon, and a pinch of salt and cook for another 2 minutes.
- Add the wine and continue cooking until the liquid has reduced by half. Then add the shrimp and ¼ cup of pasta water (more if you need it), stirring to combine. Cook the shrimp for 4-6 minutes, stirring occasionally, until they are opaque.
- Stir in half the lemon zest and remaining lemon juice, and simmer for 1 minute. Add the cooked pasta to the pan with the sauce, tossing to coat. Taste and adjust the seasoning if needed.
- Transfer the pasta to a large serving dish or divide between serving bowls. Top with the toasted panko, parmesan cheese, and more fresh tarragon.
Notes
You can also make this pasta with lobster instead of shrimp! I suggest Trader Joe's Langostino.
