Rajiv’s Garlic Butter Shrimp
When I tell you that this is some of the best shrimp I've ever had...my husband was craving garlic shrimp he's had in Hawaii but wanted to add his own special twist to it. Yes, it's a very rich recipe and has a lot of butter, but it's totally worth it in this recipe as a treat! So garlicky it'll blow your mind. And the best part is eating the crispy, garlic butter-soaked bits off of the shrimp shell, then removing the shell and enjoying the shrimp inside while dipping it in the garlic butter. Unreal. You will absolutely love this!! We've made it dairy-free with plant based butter before and it was just as delicious.
Ingredients
- 1 lb1 lb1 lb Raw Shrimp, jumbo, with shells on (clean and deveined)
- 2.5 Tbsp2.5 Tbsp2.5 Tbsp Cassava Flour
- 2 tsp2 tsp2 tsp Garam Masala, (Primal Palate)
- 1.5 tsp1.5 tsp1.5 tsp Sea Salt
- 1 tsp1 tsp1 tsp Black Pepper
- 1 tsp1 tsp1 tsp White Pepper
- 18 cloves18 cloves18 cloves Garlic, minced (about 1 1/2 heads)
- 2 Tbsp2 Tbsp2 Tbsp Extra Virgin Olive Oil
- 1/2 cup1/2 cup1/2 cup Salted Butter, (1 stick) feel free to use dairy-free butter
- 1/2 bunch1/2 bunch1/2 bunch Flat Leaf Parsley, chopped (optional but recommended)
- 1 Tbsp1 Tbsp1 Tbsp Sesame Oil
- 1 Tbsp1 Tbsp1 Tbsp Shaoxing Wine (Chinese Rice Wine)
- 1 tsp1 tsp1 tsp Coconut Aminos, (or soy sauce)

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Melt stick of butter with 1 Tbsp olive oil in a large pan. Once the butter is melted, add in the sesame oil, rice wine, and coconut aminos (or soy sauce), and evenly stir to combine.
- Immediately add in the minced garlic. Cook for 2-3 minutes, or until the garlic is fragrant and starting to turn brown (taking care to make sure it doesn't burn).
- Pour garlic butter into a bowl and set aside for now.
- In a Ziploc bag, add in the cassava flour, garam masala, salt, black pepper, and white pepper. Shake it up, then add in the shrimp and shake it up some more. Make sure the shrimp is coated evenly. Set aside.
- Preheat the same pan on medium heat, then add 1 Tbsp oil.
- Add the shrimp into the pan one by one, making sure not to crowd the pan. (You may need to do this and the next step in multiple batches so the shrimp gets crispy and cooks evenly).
- Cook shrimp over medium heat for 2-3 minutes one each side.
- Once all the shrimp is done cooking, pour over the garlic butter you set aside earlier.
- Stir and combine, then add in the parsley. Give it one more stir and serve immediately!
