Mashed sweet potatoes
I love a sweet and savory combo. Sometimes I don't always want a savory potato and want to pair my vegetables with a sweet side. While this is a very simple recipe, this is the perfect side to any meal. Such as pairing it with broccolini or asparagus.
Ingredients
- 222 Sweet Potato, Peeled and chopped
- 0.25 cup0.25 cup0.25 cup Heavy Whipping Cream
- 0.125 tsp0.125 tsp0.125 tsp Black Pepper
- 0.125 tsp0.125 tsp0.125 tsp Nutmeg
- 1 tsp1 tsp1 tsp Cinnamon, Ground
- 2 tsp2 tsp2 tsp Brown Sugar
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a medium pot boil water on high heat
- Place your chopped sweet potatoes in the boiling water for 20 minutes or until fork tender
- Using a strainer drain the water and sweet potatoes
- Place the sweet potatoes back into the pot
- Using a potato masher or fork break down the sweet potatoes until you no longer have large chunks
- If you do not like a chunky consistency you can use a food processor and add your sweet potatoes and whipping cream
- Add in your heavy whipping cream and use a spoon to mix thoroughly
- Then add in your brown sugar, nutmeg, cinnamon and black ground pepper
- Lastly, top with butter and parsley (optional)
Notes
I personally like a chunky consistency and didn't utilize a food processor for mine. I know textures make a huge difference for the enjoying experience. If you aren't sure about the amount of cinnamon I used. You can start with 1/2tsp and add more from there.
