lamb quesabirria tacos
FLAV-OR-FUL! while these take a little extra time & prep to make, these quesabirria taco's exude authentic mexican flavors & serious deliciousness.
Ingredients
lamb birria meat
- 10 - 1510 - 1510 - 15 Ancho Chilies, Dried, or guajillo, chile de arbol, or pasilla
- 1 - 2 cups1 - 2 cups1 - 2 cups Water, for boiling
- 111 Onion, diced
- 4 cloves4 cloves4 cloves Garlic, minced
- 1 tsp1 tsp1 tsp Black Pepper
- 1 tsp1 tsp1 tsp Sea Salt
- 1 tsp1 tsp1 tsp Coriander, Ground
- 1 tsp1 tsp1 tsp Bay Leaf
- 1 tsp1 tsp1 tsp Cinnamon, Ground
- 1 tsp1 tsp1 tsp Garlic Powder
- 1 tsp1 tsp1 tsp Oregano, Dried
- 1 tsp1 tsp1 tsp Cloves, Ground
- 0.5 tsp0.5 tsp0.5 tsp Cumin, Ground
- 3 Tbsp3 Tbsp3 Tbsp Tomato Paste
- 3 - 4 Tbsp3 - 4 Tbsp3 - 4 Tbsp Apple Cider Vinegar
- 2 cups2 cups2 cups Chicken Broth
- 2 - 3 lb2 - 3 lb2 - 3 lb Lamb Shanks

- Tallow, or any fat of choice
- Cassava Flour Tortillas - Siete Foods, or GF tortilla of choice
- Oaxaca Cheese, or cheese of choice
- Cilantro
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
lamb birria
- in a pot, add dried chilis & cover with water.
- bring water to a boil, then remove from heat & let sit for 10-15 minutes.
- in a skillet, saute onion & garlic with a little avocado oil.
- drain chilis, then add rehydrated chilis, sauteed onion & garlic, pepper, salt, coriander, bay leaves, cinnamon, garlic, oregano, cloves, cumin, tomato paste, & apple cider vinegar to a food processor & puree.
- add chili mixture & broth to a crock pot, then add in lamb shanks.
- slow cook on low for 8-10 hours or until easily shreds.
- reserve any leftover sauce for dipping.
quesabirria tacos
- heat a skillet over medium heat & add fat of choice to the pan.
- to a tortilla, add birria meat, cheese, & cilantro.
- fold tortilla in half, then add to skillet & fry for 2-3 minutes on each side.
- serve with any leftover sauce.
