Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results

lamb birria

  1. in a pot, add dried chilis & cover with water.
  2. bring water to a boil, then remove from heat & let sit for 10-15 minutes.
  3. in a skillet, saute onion & garlic with a little avocado oil.
  4. drain chilis, then add rehydrated chilis, sauteed onion & garlic, pepper, salt, coriander, bay leaves, cinnamon, garlic, oregano, cloves, cumin, tomato paste, & apple cider vinegar to a food processor & puree.
  5. add chili mixture & broth to a crock pot, then add in lamb shanks.
  6. slow cook on low for 8-10 hours or until easily shreds.
  7. reserve any leftover sauce for dipping.

quesabirria tacos

  1. heat a skillet over medium heat & add fat of choice to the pan.
  2. to a tortilla, add birria meat, cheese, & cilantro.
  3. fold tortilla in half, then add to skillet & fry for 2-3 minutes on each side.
  4. serve with any leftover sauce.
