Air Fried Tofu Stir Fry (Edit recipe)

Another incredibly versatile recipe, this Air Fried Tofu Stir Fry can incorporate whatever favorite veggies that YOU love in your stir fry! You can use the Miracle Rice that I used OR some pre-made Rice or Noodles of your choice would also go nicely with this meal. If you're not a fan of Tofu, feel free to swap with chopped Chicken Thighs! You truly can't go wrong here. The one thing you DON'T want to skip out on in this recipe is the HERBS! They add so much incredible flavor that really take it over the top!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Starting with the Tofu - Wrap the block of Tofu in paper towels and press it for about 30 minutes or more to get out as much liquid as possible.
  2. Preheat Air Fryer to 390 degrees.
  3. Chop tofu into one inch cubes into a bowl and add Tapioca Flour, salt, pepper, ginger and garlic powders then toss together.
  4. Add Avocado Oil to the bowl and stir again.
  5. Put the tofu into Air Fryer basket(s), making sure to not over crowd the baskets.
  6. Set for 10 minutes, shaking baskets halfway through.
  7. Next, heat 1 Tbs Avocado oil in your skillet and add veggies to it.
  8. Sprinkle veggies with salt and stir fry about 4-5 minutes before adding 1 cube of Frozen Ginger and 1 cube Frozen Basil.
  9. Cook veggies an additional 5-6 minutes.
  10. While veggies cook, add all your sauce ingredients to a small bowl and whisk together until combined.
  11. Now that your Air Fried Tofu and Stir Fried Veggies are done, set both aside.
  12. In your dry skillet, add Miracle Rice and heat until all liquid has evaporated (about 5 minutes) then move to the side of the skillet.
  13. Add Tofu to the opposite side of the ride in the skillet and top with 4 Tbs of Stir Fry sauce then toss.
  14. Add Veggies back to your pan and heat a few more minutes until everything is warm.
  15. Serve with chopped Cilantro on top and enjoy!

Notes

*If you don't have frozen herb cubes, you can alternatively use 1 tsp grated fresh ginger and 1 tbs fresh, chopped basil! Thai Basil would also work nicely here.
