Hot Honey Grilled Chicken with Watermelon & Fennel Salad
Every single element of this salad is delicious and refreshing - PERFECT for summer! It's been my hyper fixation meal for WEEKS now. I know you'll love it too! As always, this is a versatile recipe but I highly recommend you don't skimp on the Mint, Watermelon and Fennel!
Ingredients
- 1.5 lb1.5 lb1.5 lb Chicken Thighs, Boneless Skinless
- 3 Tbsp3 Tbsp3 Tbsp Hot Honey, Mike's
- 0.333 cup0.333 cup0.333 cup Coconut Aminos
- 0.5 tsp0.5 tsp0.5 tsp Ginger, Ground
- 0.5 tsp0.5 tsp0.5 tsp Garlic Powder
- 4 cup4 cup4 cup Lettuce, Spring Mix Salad Greens
- 1.5 cup1.5 cup1.5 cup Watermelon, in 1 inch cubes
- 0.25 cup0.25 cup0.25 cup Fennel, thin slices
- 2 Tbsp2 Tbsp2 Tbsp Mint Leaves, chopped
- 1 Tbsp1 Tbsp1 Tbsp Pumpkin Seeds
- 4 Tbsp4 Tbsp4 Tbsp Miso Caesar Dressing - SideDish

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a bowl, combine Hot Honey, Coconut Aminos, Garlic & Ginger powder.
- Pour mixture over chicken in a bowl then cover and put in the fridge for at least 30 minutes to marinate.
- Preheat your grill to a medium high heat.
- When ready, grill thighs 12-15 minutes flipping halfway.
- Add the rest of the salad ingredients (minus dressing) to a large bowl and toss.
- To assemble your meal, add salad to your plate and top with grilled chicken thighs.
- Feel free to slice the thighs or leave them whole.
- Top with Miso Caesar dressing and enjoy!!
Notes
I wanted to keep the recipe simple here but Avocado and Cucumber are delicious additions to this salad! You may also serve the Salad separate from the Chicken and add rice with the meal as well. I like to serve 1-2 chicken thighs with this meal depending on whether I'm serving my kids or an adult. The entire recipe can be doubled and tripled with ease! I will sometimes drizzle a little extra hot honey before flipping the thighs too!
