High Protein blueberry Muffins
These high-protein blueberry muffins are soft, lightly sweet, and packed with flavor. They’re an easy, satisfying snack or breakfast that’ll keep you going.
Ingredients
- 1 whole1 whole1 whole Egg
- .25 cup.25 cup.25 cup Almond Milk
- .5 cup.5 cup.5 cup Plant-Based Plain Yogurt, Or Greek
- 1 tsp1 tsp1 tsp Vanilla Extract
- .5 cup.5 cup.5 cup Sprouted Rolled Oats - One Degree Organic
- 1.5 cups1.5 cups1.5 cups Oat Flour
- .25 cup.25 cup.25 cup Coconut Sugar
- .25 cup.25 cup.25 cup Vanilla Protein Powder - Nuzest
- 2 tsp2 tsp2 tsp Baking Powder
- .5 tsp.5 tsp.5 tsp Baking Soda
- 1 cup1 cup1 cup Blueberries
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat your oven to 350F
- In a large mixing bowl add the almond milk, egg, yogurt, vanilla extract and whisk until combined.
- Add in the sugar, oats, oat flour, protein powder, baking soda, baking powder and mix well.
- Lastly gently fold in the blueberries and transfer the batter to a lightly greased muffin pan. It makes about 8 muffins.
- Bake in the oven for 30-35 minutes or until a toothpick comes out clean.
- Let them cool for 20 minutes and enjoy!
