Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat oven to 375F and grease/line a muffin tin.
  2. In a medium sized bowl, combine dry ingredients.
  3. In a large bowl, combine wet ingredients.
  4. Fold dry ingredients into wet and stir until just combined (don't overmix!)
  5. Toss blueberries in 1 tbsp of oat flour, then gently fold them into the batter.
  6. Divide batter evenly into muffin cups, filling each about 3/4 of the way full. Bake for 18-22 minutes, until lightly golden on top and toothpick comes out clean.
  7. Let cool 10 minutes in pan, then transfer to a wire rack to cool completely. Store in an airtight container in the fridge.
