Banana Spinach Muffins

Ingredients
- 1.5 cups1.5 cups1.5 cups Baby Spinach
- 1 cup1 cup1 cup Sprouted Rolled Oats - One Degree Organic
- 111 Banana, Large and ripe
- 0.333 cup0.333 cup0.333 cup Organic Pure Vermont Maple Syrup - Mount Mansfield Maple Products
- 0.25 cup0.25 cup0.25 cup Almond Butter
- 0.25 cup0.25 cup0.25 cup Almond Milk
- 111 Egg
- 2 Tbsp2 Tbsp2 Tbsp Coconut Oil
- 1 tsp1 tsp1 tsp Pure Vanilla Extract
- 0.25 tsp0.25 tsp0.25 tsp Baking Soda
- 0.25 tsp0.25 tsp0.25 tsp Salt
- 0.25 cup0.25 cup0.25 cup Mini Chocolate Chips, Semi-Sweet, Plus extra for sprinkling on top
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350F and grease a muffin tin.
- Into a blender, add all ingredients except the chocolate chips.
- Once blended, pour the chocolate chips in and mix with a spoon.
- Pour batter into mini muffin tin.
- Sprinkle mini chocolate chips on top if desired.
- Bake for 25 minutes, or until a toothpick inserted into the center comes out clean. Enjoy!
