  1. Cut lemons lengthwise and carefully scoop out the inside.
  2. Juice lemon segments (I got about 1/2 cup of juice total).
  3. In a medium pot, combine lemon juice, coconut milk, protein powder, maple syrup, agar agar, and turmeric.
  4. Simmer over medium heat while whisking until barely simmering (about 5 minutes).
  5. Pour mixture back into lemon rinds and refrigerate for 1-2 hours until set.
