Process

  1. In a small pot boil 1lb of chicken. While the chicken cooks start on the soup.
  2. In a large pot, heat oil over medium. Add onion and garlic; cook until fragrant.
  3. Stir in carrots, cauliflower, turmeric, ginger, salt, parsley, and pepper. Cook for 2–3 minutes.
  4. Shred the chicken and place in the pot, pour in broth, and bring to a gentle boil. Reduce heat and simmer for 20–25 minutes or until veggies are tender and can be mashed with a fork
  5. Stir in spinach or kale (if using), lemon juice, and fresh parsley. Simmer for 2–3 more minutes. Serve warm.
