Gut healing Chicken Cauliflower soup

Ingredients
- 1 lb1 lb1 lb Chicken Breast
- 1 Tbsp1 Tbsp1 Tbsp João's Arbosana Extra Virgin Olive Oil - Wildly Virgin
- 1 whole1 whole1 whole Onion, chopped
- 2 cloves2 cloves2 cloves Garlic, minced
- 3 whole3 whole3 whole Carrots, sliced
- 1 whole1 whole1 whole Cauliflower, .5-1 whole head of cauliflower (about 4 cups) cut into small florets
- 3 cups3 cups3 cups Ginger & Turmeric Bone Broth - Roli Roti
- 1 tsp1 tsp1 tsp Parsley, Dried
- 1 tsp1 tsp1 tsp Turmeric
- 1 tsp1 tsp1 tsp Black Pepper
- 1 pinch1 pinch1 pinch Sea Salt
- 2 - 3 cups2 - 3 cups2 - 3 cups Baby Spinach
- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Lemon Juice
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a small pot boil 1lb of chicken. While the chicken cooks start on the soup.
- In a large pot, heat oil over medium. Add onion and garlic; cook until fragrant.
- Stir in carrots, cauliflower, turmeric, ginger, salt, parsley, and pepper. Cook for 2–3 minutes.
- Shred the chicken and place in the pot, pour in broth, and bring to a gentle boil. Reduce heat and simmer for 20–25 minutes or until veggies are tender and can be mashed with a fork
- Stir in spinach or kale (if using), lemon juice, and fresh parsley. Simmer for 2–3 more minutes. Serve warm.
