Gluten Free Nut Butter Brownies
Confession time: who else can’t resist the allure of chocolate? Especially when it’s full of rich, earthy flavors with just a hint of fruity notes. It’s not just a treat; it’s my go-to indulgence. And here's the best part: cacao, the heart of dark chocolate, is loaded with goodies like antioxidants, magnesium, and iron. It’s a daily mood booster that helps me bounce back from tough workouts and everyday stress.
Now, the recipe: black bean brownies. Don't fret - you won't taste the beans, just blend well. 🙂 Since we don't use flour, these brownies are gluten-free and pack more fiber and protein than a typical brownie. And the game-changer? A finishing swirl of our mixed nut butter, "The High Bar", featuring a blend of almonds, walnuts, and pecans. Ready to indulge?
Ingredients
Wet Ingredients
- 15 oz15 oz15 oz Black Beans, drained and rinsed

- 222 Eggs, large
- 1/3 cup1/3 cup1/3 cup Olive Oil

- 1 tsp1 tsp1 tsp Vanilla Extract

Dry Ingredients
- 1/4 cup1/4 cup1/4 cup Cacao Powder, Raw
- 1/2 tsp1/2 tsp1/2 tsp Baking Powder

- 1 cup1 cup1 cup Maple Sugar, or other granulated sugar

- 1 pinch1 pinch1 pinch Salt

Add Ins
- 3 oz3 oz3 oz 85% Cacao Organic Vegan Dark Chocolate Bar - Pascha Chocolate Co., or ½ cup chocolate chips

- 1/4 cup1/4 cup1/4 cup Pecans, or walnuts, chopped

- 1/4 cup1/4 cup1/4 cup Maple Bliss Nut Butter - Mixed Up Foods

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350F. Line an 8x8 inch baking pan with parchment paper. Alternatively, you can line 2 standard loaf pans.
- Blend black beans in a food processor until smooth. Adding the oil at this stage can help.
- Add remaining wet ingredients and blend until incorporated.
- Sift in cacao powder and baking powder. Then, add remaining dry ingredients. Mix until incorporated.
- Stir in chocolate and nuts by hand.
- Pour batter into pan. Plop spoonfuls of nut butter over the surface of the batter. Using a chopstick or knife, create swirls with the nut butter in the batter.
- Place in oven for at least 25 minutes and up to 40. Once a toothpick inserted comes out clean, it’s done.
- Let cool in pan for 10+ minutes. Remove from pan, then carefully slice. Enjoy!
