NOMATO Sauce – “No Tomato” Sauce (Nightshade-Free)
This is a tomato-free alternative to traditional tomato-based sauces. Made with roasted vegetables, fresh herbs, and bone broth. A great sauce for those who need to avoid nightshade vegetables, such as tomatoes due to sensitivities, allergies, or autoimmune conditions.
Ingredients
- 1 whole1 whole1 whole Beets, fresh medium (or 2 small)
- 2 whole2 whole2 whole Zucchini
- 0.5 whole0.5 whole0.5 whole Turnips, peeled
- 2 whole2 whole2 whole Celery, stalks
- 3 cloves3 cloves3 cloves Garlic, peeled

- 0.5 cup0.5 cup0.5 cup Chicken Bone Broth

- 8 whole8 whole8 whole Basil, Fresh, leaves

- 2 tsp2 tsp2 tsp Oregano, Dried

- 1 tsp1 tsp1 tsp Sea Salt, (up to 2 teaspoons)

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Wrap beet in foil, placed on a baking sheet. Roast at 400 degrees until fork tender. Cool, peel, and cut beet in half, set aside.
- Cut up remaining vegetables into 2-inch cubes.
- Place cut up vegetables and garlic cloves onto a parchment lined baking sheet. Drizzle with olive oil. Season with salt and pepper.
- Place vegetables in a 400-degree oven. Roast 20 to 30 minutes, or until fork tender.
- Allow vegetables to cool slightly.
- Transfer vegetables and 1/2 beet to a blender or food processor with the bone broth. Blend. Add in basil and seasonings. Blend again until smooth. Add more broth for a thinner sauce. Can add more beet for an earthy taste.
- Pour the sauce and simmer 10 minutes. Adjust seasonings. Can add more broth if needed.
